fix[servers]: fix several issues

Browse source 
- winters: flake path was set wrongly
- spotifyd: could not connect (added hosts entry)
- nextcloud: plugins used outdated nextcloud version
- nextcloud: allow all upload sizes on proxy
- matrix: adapt to new bridge config schema
